love how he flips between "i" and "you" here. "i" HAD to retain them--the pressure's on him, the expectation, and the "having" to do it like he has no choice (fear of failure and not measuring up); and then when he gets to his actual emotional reaction he distances himself and says "you" like it's a general reaction any/everyone would have, a universal reaction, as opposed to what he specifically felt. a distancing that normalizes (hate that word) his reaction both in the sense that it posits that his reaction was normal and also that that is the normal reaction to have.

also his body when he's telling syd this: eyes closed, hunched over. he's so uncomfortable. 2 seconds ago he was laughing. i don't think he hates cooking and being a chef. but i do think it's fucked him up a lot. like, he finds joy in the actual process of cooking and with his work fam (t, ebra, marcus, fak, etc) but the running the business and like the evaluation by peers and the industry....that fucks him up.

hot take but i think we need to start divesting from using representation and relatability as a synonym for quality, and maybe even as a metric. like are you able to watch a movie or tv show or read a book where the characters’ motivations are almost completely alien to you, and still enjoy it/appreciate it? can you see a representation of a demographic you belong to that doesn’t quite gel with your own personal experience, and not automatically discount the work? are you just consuming media like a parakeet looking in the mirror?
